Herbed Baked Caprese Stacks
1/3 cup seasoned breadcrumbs
1 tablespoon unsalted butter, melted
4 medium tomatoes on the vine
Salt and ground black pepper to taste
12 1/4-inch thick slices fresh mozzarella
12 fresh basil leaves
Cooking spray

Pre-heat oven to 425 degrees.
Combine breadcrumbs with melted butter. Set aside.
Trim a little off the bottom of each tomato so that it can stand upright. Now cut each tomato into four rounds. Season the slices with salt and pepper. Place the bottom tomato slice on a pre-greased 8×8 casserole dish, top with 1 slice of cheese, 1 basil leaf and a sprinkle of the buttered seasoned breadcrumbs. Top with second tomato slice and repeat process until three layers are formed. Cover with fourth tomato slice. Repeat with remaining 3 tomatoes.
Bake for 6 to 8 minutes or until the tomatoes are heated through, the breadcrumbs are lightly browned and the mozzarella just starts to melts. Serve hot.
