Batter Ingredients:
2 teaspoons of ground cinnamon
1 Teaspoon grated orange rind
2/3 cup fresh orange juice
1/2 cup vegetable oil
4 large eggs
1 (15oz) package gluten-free yellow cake mix
1 (3.4oz) package gluten-free vanilla instant pudding mix
3 1/3 cups grated carrots
3/4 cup raisins
3/4 chopped walnuts
Butter or cooking spray
Frosting:
8oz cream cheese
2 tablespoons milk or creamer
1 1/2 teaspoons vanilla extract
4 1/2 cups powdered sugar (sifted)
