These gluten-free carrot muffins are tasty and nutritious!
RECIPE:
2 cups gluten-free oat flour
1 Tbsp. ground flax seed
2/3 cup coconut palm sugar (or brown sugar)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
2 cups shredded carrots (about 6 medium carrots)
2/3 cup unsweetened applesauce
1/2 cup water
2 tsp. vanilla extract
1 tsp. apple cider vinegar
Preheat the oven to 400 degrees Fahrenheit. To a bowl, add oat flour, flax seed, coconut palm sugar, baking powder, baking soda, salt, and cinnamon, and stir it all together. Add carrots, applesauce, water, vanilla, and apple cider vinegar, and stir well. Scoop the batter into a greased muffin pan. Bake 18-20 minutes. Makes one dozen muffins.
