Cheesy Stuffed Indian Flat Bread l Meatless Monday-Vijaya Selvaraju

If you’re a fan of quesadillas, you’ll want to give these a shot.

INGREDIENTS:
For the dough:
2 cups whole wheat flour
1 tsp salt
¼ cup vegetable oil
¾ cup water, or more to form dough
For the filling:
½ cup shredded mozzarella
½ cup shredded white cheddar
½ cup white onion, minced
1 Thai green chili, minced
¼ cup fresh coriander, chopped

STEPS
1.) In a bowl, mix together flour, salt and oil.
2.) Gradually add water until a soft and slightly sticky dough forms. Set aside to rest for 15 minutes.
3.) Combine all filling ingredients and set aside.
4.) Pinch golf-ball-sized pieces of dough and gently press to flatten. 5.) Fill with 1–2 tablespoons of cheese mixture, and bring in all sides of the dough to close. On a floured surface, roll out to flatten.
6.) Heat a frying pan on medium-high heat. Place dough in pan, and cook for 30–45 seconds per side, until slightly charred. Repeat with remaining dough and filling.
7.) Cut into fours to serve.
