INGREDIENTS
1 cup of old fashioned oats
3/4 teaspoon kosher salt
1/2 cup sliced almonds
1/2 cup chopped cashews (unsalted)
1/4 cup unsweetened dried fruit (try cherries, cranberries, apricots)
4-5 tablespoons brown sugar
3 tablespoons wheat germ (toasted or untoasted)
1/2 cup unsweetened coconut
1/4 cup coconut oil, melted
1/3 cup almond butter
1/4 cup honey
1 teaspoon vanilla extract
DIRECTIONS
1. Preheat oven to 350. Line 9×9 pan with parchment paper (for easy cleanup).
2. Mix dry ingredients (oats through dried coconut). Stir in wet ingredients until incorporated.
3. Spread into pan and pat down. Bake for 20 minutes.
4. Cool and slice.
Store in airtight container or, individually wrapped, in freezer.
