CHICKEN FRIED STEAK
Billy Bob’s Texas

6 or 8 ounce tenderized beef cutlet
(or in the case for the one the Fung brothers used 32 ounce)
6 eggs
6 cups buttermilk
2 tablespoon Worcestershire sauce
3 cups flour
1 tablespoon cracked black pepper
2 teaspoon cayenne pepper
2 teaspoon Cajun seasoning
2 teaspoon salt
4 cups vegetable oil

Whisk milk, eggs & Worcestershire together and set aside. Combine flour, peppers, Cajun seasoning and salt together in another container. Dip the cutlet in the egg mixture then dredge in the flour mixture. Dip again in the egg wash, and gently place in skillet with the hot oil (350 degrees). Cook until breading is set and golden brown. Carefully remove steaks from the skillet and drain on a plate lined with paper towels.
