In this test kitchen — and at home — I’m constantly trying to think of ways to reinvent chicken dinner. Well, this dish offers up something new, in just five ingredients! All you have to do is let chicken thighs simmer with tomatoes, onion, garlic, and oregano for a healthy, easy dinner with great Italian flavor.

Sarah’s Tip of the Day:
Check out the video and I’ll show you the safest way to slice an onion (gotta keep all ten fingers intact!) and the best way to brown your chicken. Give this recipe a whirl, and don’t be afraid to make it your own: Try it with more garlic, different herbs, or even add a splash of red wine. Let me know how you like it!

Recipe Ingredients:
2 pounds frozen tomatoes (4 cups), thawed
1 tablespoon vegetable oil
4 bone-in, skin-on chicken thighs (1 1/2 pounds total)
Coarse salt and ground pepper
1 small yellow onion, thinly sliced (1 cup)
3 garlic cloves, smashed and peeled
3 sprigs oregano
