Chocolate mug cake
Ingredients:
1/4 cup gluten free flour
2 1/2 Tbsp. unsweetened cocoa
pinch of salt
1/2 tsp. baking powder
2 Tbsp. maple syrup
2 Tbsp. coconut oil, melted
3 Tbsp. light coconut milk
1 – 2 Tbsp. milk chocolate chips
1/4 tsp. instant espresso coffee
Directions:
Add the flour, cocoa, salt, baking powder, and coffee to a microwave safe mug and mix to combine.
Then add the wet ingredients: maple syrup, coconut oil, and coconut milk. Stir with a spoon and then with a fork to break up any lumps.
Place the cup in the microwave and heat on high heat for between 1 min and 45 seconds and 2 minutes. Cake is done when it begins to pull away from the sides and a tooth pick inserted in the middle of the cake comes out clean.
Serve this brownie in a mug with a dusting of powdered sugar, whipped cream, ice cream, or more chocolate chips on top. Enjoy!
