Christmas ELF COOKIES
(Makes 2 dozen)

2 – 1/2 cups Bread flour
1/2 cup powdered sugar (more to roll cookies in after baking)
1/2 teaspoons salt
1 cup butter, softened
2 teaspoon vanilla extract
1/2 cup shelled unsalted natural pistachios (about 2 ounces) chopped
1/2 cup dried tart cherries or dried cranberries, chopped

1. In a medium mixing bowl… cream together softened butter and powder sugar, using a hand mixer. Beat in salt, pistachio nuts, and dried fruit until well blended.

2. Gradually add flour, to butter mixture, using a wooden spoon. Mix until dough sticks together and can be rolled into balls.

3. Roll dough into 1-inch balls between the palm of your hands. Add to a lined parchment or lightly buttered cookie sheet.

5. Bake in a preheated 350 degrees F. oven for 16 minutes.
Cool on cookie sheet for 10 minutes. Remove cookies and roll in powder sugar until well coat. After the cookies have completely cooled; roll again in powdered sugar.

TIPS: Store in airtight containers up to 4 days or freeze up to 3 weeks.
