Amongst the meat, veg, gravy, paper hats and naff cracker jokes, bread sauce is an easy thing to miss off your Christmas dinner checklist. But we’ll tell you this: food and festivities are a lot better for having it around.
If you’re eating turkey or chicken for Christmas main, set aside a little time to follow our bread sauce recipe.
What you need:
700ml whole milk
1 onion
4-5 slices of bread
12-14 cloves
1 whole nutmeg
1-2 bay leaves
What you need to do:
1. Peel the onion and chop it in half. Stud each half with cloves.
2. Pour the milk in to a pan. Add the onion and bay leaves and grate in the nutmeg. Bring the milk to the boil and leave it simmer for 5 minutes. Remove the pan from the heat and leave it to stand for 15 minutes.
3. Strain the milk into a bowl.
4. Break up the bread into chunks and pop them into a food processor. Blend until breadcrumbs are formed.
5. Pour the milk into a pan and bring to the boil. Slowly stir in the breadcrumbs until you’ve achieved the desired consistency.
Optional tip: stir in some butter and cream for added indulgence.
6. Spoon into a serving bowl and make room for the bread sauce on your dinner table!
