Christmas Recipes: How to Make Perfect Roast Potatoes

Every Christmas dinner needs a good roast potato, preferably homemade. Nothing against frozen roasties or anything, but this is one meal of the year that deserves the very best – hungry and increasingly tipsy relatives demand it. Swap the Aunt Bessie’s for Maris Pipers and follow our recipe for potato perfection.

What you need:

Maris Piper potatoes
Olive oil
Butter
5-6 garlic cloves
A few sprigs of fresh rosemary
Seasonings

What you need to do:

1. Peel the potatoes and cut them into evenly sized chunks. Wash them into cold water to remove the starch and drain.

2. Put the potatoes into a pan of fresh water and add a little salt. Part-boil the spuds for 5-7 minutes until the outer layer has softened.

3. Drain the potatoes into a colander and steam over a pan of boiling water for a few minutes to reduce the moisture and allow them to crisp up more easily. Give the potatoes a good shake in the colander to help them really crisp up when cooked.

4. Prep a large baking tray with 5-6 chunks of butter and olive oil and pop in the potatoes, nicely spaced out over one layer. Cover the potatoes in oil and put them in a preheated oven at 180°C/350°F/gas 4 for 35-40 minutes.

5. Remove the potatoes from the oven and turn them over. Crush the garlic cloves and add them the baking tray. Mix in a few rosemary sprigs and pop the tray back into the oven for 15-20 minutes.

Voila! Perfect roasties.
