Ingredients
• 3 Tbsp applesauce (45mL)
• 1.5 Tbsp vegetable oil (23mL)
• 1.5 Tbsp buttermilk (23mL)
• 1/2 tsp vanilla extract (2.5mL)
• 1/2 cup all-purpose flour (60g)
• 1/4 cup packed light-brown sugar (45g)
• 1 tsp ground cinnamon (5mL)
• 1 dash ground nutmeg (optional)
• 1/2 tsp baking powder (2.5mL)
Recipe Cream Cheese Icing
• 1 Tbsp Cream Cheese softened (15mL)
• 2 Tbsp icing sugar (13g)
• 1 tsp milk (5mL)
Directions • Prepare Cream Cheese Icing according to directions listed, set aside. Combine all ingredients in a mug then whisk together with a fork until combined and nearly smooth. Microwave mixture on high power for 1:30 then check cake. If it is not fully cooked microwave for an additional 15 seconds. Serve warm topped with Cream Cheese Icing.
Cream Cheese Icing • Combine all ingredients in a small bowl and whisk with a fork until smooth.
