This week in the Sorted kitchen we spotlight some incredibly refreshing drinks mixed by Rebecca Seal
This is a Mojito-style cocktail, but made into a punch so you can serve it up at a party with minimum fuss. If you want to be really fancy, switch all or some of the soda water for cava or dry sparkling wine.
The trick with punch is to balance the sweet, sour and boozy notes and to prevent it getting too dilute. So don’t make enormous quantities all at once unless you know your friends are always very thirsty! If it sits about for hours it will get wetter and warmer as the ice melts, and much less tasty.
