Crispy Beef Quesadillas I Frankie Celenza

The perfect late-night snack to throw together with ingredients you already have in your kitchen.

INGREDIENTS:
8 ounces ground beef
Salt and pepper, to taste
Olive oil
4, 8-inch tortillas
6 slices Muenster cheese
1/2 jalapeño, thinly sliced
1 tablespoon butter
Salsa and sour cream for dipping

STEPS:
1.) Heat a cast-iron skillet over medium-high heat. Flatten the ground beef and make it as wide as possible (a little wider than the circumference of the tortilla). Sprinkle liberally with salt and pepper on both sides.
2.) Pour some oil into the skillet, then add the ground beef patty. With a spatula, press down hard on the patty to flatten. Let burger cook about 80 percent of the way on one side to get a nice crust, then flip and finish cooking.
3.) Lay a tortilla out on a flat surface and top with cheese, covering the tortilla as much as possible. Add some sliced jalapeños on top of the cheese.
4.) Remove burger patty from the skillet and place on top of the jalapeños. Top with more cheese and another tortilla.
5.) Melt the butter in a medium frying pan over medium heat. Place the quesadilla in the pan and use a smaller pan to press down on the quesadilla while it browns. Flip quesadilla to brown the other side.
6.) Slice into pieces and serve with salsa and sour cream.
