Crispy Popcorn Chicken Karaage | Seonkyoung Longest



Fried chicken addicts will love these bite-sized pieces of crispy chicken with lemon mayo dressing.

2 chicken thighs
1 tsp grated ginger
1 tsp soy sauce
1 tsp mirin
Pinch of black pepper
1 egg white
5 Tbsp cornstarch
2 tsp cooking oil
1 cup panko breadcrumbs
Frying oil
For sauce:
2 Tbsp Japanese mayonnaise
1 Tbsp fresh lemon juice and some zest
½ tsp salt
Pinch of black pepper

1.) Cut chicken thighs into small pieces. Mix ginger, soy sauce, mirin and black pepper with chicken, and let it marinate for 20 minutes.
2.) Add egg white, cornstarch and cooking oil into bowl with marinated chicken. Mix well with your hands. Add panko, mix well and set aside for 5 minutes.
3.) Heat oil to 350ºF and drop chicken into pan one by one. Keep stirring while frying. Cook in batches if needed. Remove chicken from oil and drain on a paper towel.
4.) Combine all ingredients for sauce in a small mixing bowl.
5.) Place popcorn karaage on a serving plate. Serve sauce on the side or drizzle on top! Enjoy!
