INGREDIENTS

1 skinless bone-in chicken thigh
2 medium sweet potatoes
1/3 cup quick cooking oats
Water

RECIPE

Peel and cut one sweet potato into chunks. Peel and cut the other sweet potato into 2-inch sticks.

In a pot, boil chicken and sweet potato chunks, until the chicken is fully cooked and the sweet potato is fork tender.

In non-stick pan, cook sweet potato sticks until slightly browned. Set aside.

In a processor, grind the oats into a flour. Add about ¼ cup of the hot cooking liquid, shredded chicken, and sweet potato chunks. Blend until smooth.

Pour the mixture into an ice cube tray, place the “sticks” in the middle of each one, and freeze until the mixture hardens completely.
