I have to admit, I have never really been a huge fan of beets, but this gluten free side dish will leave you wanting for more, so I recommend that you double the ingredients. The roots of the beet are a an excellent whole food containing few calories, but rich in nutrients. They are particularly high in folate, as well as vitamins B3, B6, and B5. Additionally beets are an excellent source of the minerals potassium, iron, copper, magnesium, and manganese. Additionally, the leaves can be sauteed (similar to the cabbage recipe here) for an extra boost of vitamin C, vitamin A, and carotenoids. Beets are especially high in betaine.
