This is such a delicious recipe. I hope you will try it. Yes it is made with sunnyside up eggs. If those don’t suit you, you can scramble the eggs.
You can also substitute the cheese if you wish. I used cotija cheese in this recipe and it goes beautifully. It’s a Mexican cheese that is crumbly and doesn’t melt.
You could also use queso fresco, monterey jack or even a Mexican blend. It will all be good.
I thinks it’s the rancheros sauce that makes this dish along with the fried corn tortillas. Don’t skip frying the tortilla step or you might be disappointed in the final result. It really does add to the dish.
If you don’t like cilantro, as some people don’t, you can substitute flat leaf Italian parsley instead.
