“Hell’s Half Acre Burger”

Ingredients
1 ½ pound Elk Meat (ground)
1/2 pound Bear Meat (ground)
1 onion (chopped)
1 Tomato (chopped)
Mustard (to taste)
4 slices of American Cheese
Pickles (to taste)
4 buns

Makes 4 Half Pound Burgers

Mix Elk meat, bear meat and pound half of the onions into the meat and form into patties. As the patties cook, sauté the tomatoes and additional onions. After one side of the meat is cooked, layer on the tomatoes, extra onions, and mustard.  When the mustard is hot add a layer of American Cheese to seal the other condiments on the meat. 

Butter toast the bun and add the meat, pickles, tomatoes, onions, cheese to the bun with extra mustard.
The recipe can also be made with straight ground beef. 

This recipe originated in the honky tonk district called “Hell’s Half Acre” at Kelly’s Burger around 1909.  Hell’s Half Acre lasted from 1870 until 1961. Butch Cassidy, Etta Place, Sundance Kid, Bat Masterson, Wyatt Earp, Long Hair Jim Courtwright, and Luke Short were all part of the famous and infamous that passed through Hell’s Half Acre.  In fact Wyatt and one of his brothers witnessed the gun fight in which Luke Short killed Courtwright.
