Gluten Free Carrot Cake

This lighter Gluten Free Carrot Cake uses gluten free Bisquick to make it easy to throw together quickly. Grated carrots, mashed sweet potatoes and applesauce keep this cake moist. Those orange colored vegetables provide vitamins and beta carotene you won’t typically find in most desserts. For the cream cheese icing I’ve used low fat cream cheese to help keep the calories down without compromising the luxury.

Ingredients list

• 2 ½ cups gluten free Bisquick
• 4 eggs
• ½ cup applesauce
• 1 cup grated carrot
• 1 cup cooked mashed sweet potatoes
• ½ cup melted butter
• ¾ cup milk
• 1 ½ cups firmly packed brown sugar
• 1 tbsp pumpkin pie spice
• 1 tsp vanilla
• FOR THE CREAM CHEESE ICING:
• 8 oz low fat cream cheese, softened
• 4 oz butter, softened
• 1 tsp vanilla
• 1 ½ cups confectioner’s sugar
