Gluten Free Cookie Recipe: Chocolate Chip Coconut Oatmeal Flax and Chia Seed Cookies

An amazing nutrient rich Chocolate Chip Flax & Chia Seed Cookie – it’s fabulous!

I use the Decadent Blend Chia & Flax Seed blend – it makes the cookies taste amazing.

Here is the entire recipe:

1/4 cup soft kerry gold butter
1/4 cup coconut oil -organic virgin olive oil
1 free range egg
3/4 cup almond meal (or almond flour, very firmly packed)
1/4 cup flour (coconut or gluten free option very firmly packed)
1 tsp baking soda
1/2 tsp fine sea salt
1 dash cinnamon (optional)
1 tsp vanilla extract
1/2 cup maple syrup (real, preferably grade B or honey)
1/4 cup Decadent Blend Chia & Flax Seed blend
1/2 steel cut oats that have been soaked in hot water for 1 hour and drained
1/2 cup or more soy free, dairy free chocolate chips

Bake at 325 degrees for 12-14 mins.
