Gluten-Free & Dairy-Free Lemon Tart Recipe

Alina Zhukovskaya, Health Coach and Raw Food Chef shows how to make a Gluten-Free & Dairy-Free easy lemon tart. RECIPE BELOW

CRUST
2 cups shredded coconut
1/3 cup cashews (dry)
1/2 teaspoon seasalt
2.5 tablespoons raw agave or raw honey
1.5 tablespoon coconut oil
2 large Medjool Dates

Process all the ingredients in an S-Blade Food Processor. Press into a tart or pie shell. Let rest.

FILLING
1.5 cup soaked cashews
¾ cup water with 1 teaspoon agar agar diluted in it
1/3-1/2 cup lemon juice
1/2 cup raw agave
1/2 cup coconut oil
¼ teaspoon nutritional yeast
¼ teaspoon salt
1 vanilla bean
2 tablespoons lemon zest

Blend all the ingredients in a Vitamix or a powerful blender for about 1 minute or until very smooth. Pour into a pie shell. Chill in the fridge or a freezer to set.
