Gluten Free Oatmeal Cookies Recipe

These loaded oatmeal breakfast cookies are a reduced fat version of a classic oatmeal cookie. But this version is loaded up with all of the ingredients that you might stir into a bowl of oatmeal at breakfast. With heart healthy walnuts, dried cranberries, raisins and slivers of dried apricots there’s something for everyone. For the kids, I’ve also included a handful of semisweet chocolate chips which make these cookies hard for anyone to resist. A few of these yummy cookies are nutritious enough to be a quick breakfast or a healthy snack the whole family will enjoy.

Ingredients list:
• ¾ cup butter, softened
• 1 cup brown sugar, firmly packed
• 2 eggs
• 1 tsp vanilla
• 1 ¼ cups gluten free Bisquick
• 1 tsp cinnamon
• 3 cups gluten free rolled oats
• 1 cup walnuts, chopped
• ½ cup chocolate chips
• 1/3 cup dried cranberries
• 1/3 cup raisins
• 1/3 cup dried apricots, chopped into small pieces
