To make 8 waffles :

• 250g of flour : half rice, half corn starch for the gluten free version, or wheat for the regular
• 80g of sugar
• 80g of hazelnut flour
• 200g apple sauce
• 90g of rice milk (use 180 for the wheat version)
• 11g of baking powder

▸ Put all the dry ingredients in a big bowl or container.
▸ Add the apple sauce & milk & mix everything together.
▸ Add a little bit of oil in the dough if you want to enhance the taste (optional).
▸ Oil the waffle maker.
▸ Pour some dough & spread it.
▸ Wait for a few minutes & slowly open the waffle maker, by making sure it’s not sticking to the top part. If it does, use a spatula to detach it while opening.
▸ Repeat the process. Always oil your waffle maker so the dough doesn’t stick to it.

▸ It’s best to roast whole hazelnuts by placing them in the oven at 275°F for 15-20 minutes (140°C) and then put them in your blender to make the flour.
▸ Make sure the baking powder is gluten free, if you’re going for the gluten free version.
