Ingredients:
Kale
Quinoa
Chickpeas
Lentils
Half Bell Pepper
Handful of Cherry Tomatoes
Cucumber Chunks
Avocado
Lemon
Pomegranate
Coriander
Beetroot
Baby Gem Lettuce
Chilli

You can use any vegetables of your choice! Feel free to add meat or fish too!

This is a healthy lunch idea for you if you are trying to be a little more healthy and are stuck for ideas or if you are just interested in making a super yummy side dish!

As for the whole vegan/plant based diet I'm trying out… I complete understand that some people won't agree with it but I'm just trying it out. I'm setting it as a challenge for myself to see how I get on and I've always been interested in plant based diets. It may last 1 week or it may be a long-term thing. Who knows! I am making sure that I am getting all the right nutrients and minerals that our bodies need!
