3 pounds chicken legs or thighs
1½ tablespoons vegetable oil
1 large onion, sliced
1 – 3-inch piece of ginger, peeled and minced
8 cloves garlic, chopped
2½ pounds yams, peeled and cubed
1 – 15-ounce can fire roasted crushed tomatoes
1 quart chicken stock
1 cup peanut butter
1 cup roasted peanuts
1 tablespoon ground coriander
1¼ teaspoons cayenne pepper
Salt and pepper, to taste
½ cup cilantro, chopped
