** Recipe Details**

Nori Wraps—
Filling: Clover sprouts, avocado, mung bean sprouts, carrots, tomatoes, cucumber and zucchini
Marinate chopped ginger in reduced sodium tamari- Non-GMO!

Papaya with lime juice—

Bananas Drizzled in Chocolate—
Use ripe, spotted bananas for best digestion and flavor!
Ingredients for chocolate:
Organic coconut sugar, Organic raw cacao butter and paste. I used Sunfood Superfoods brand for the cacao.
Create a double boiler by filling a pot 1/3 way with water and placing a metal bowl over top of it.
Make sure the bowl is not touching the water directly or it will get too hot.
Mix equal parts coconut sugar with filtered or spring water.
Keep stirring frequently to prevent burning.
The sugar will completely dissolve and the water will evaporate mostly.
Turn off the stove and carefully remove from heat.
Add cacao and stir until totally mixed!
Pour over bananas and freeze for 10-15 minutes.

Skillet Potatoes—
Cube potatoes into small pieces and combine in a large skillet with avocado oil and Himalayan salt. For a healthier version, boil the potatoes instead.
While they cook make the sauce:
Nutritional yeast, Salt free tomato paste, Bragg’s apple cider vinegar, and macadamia nut butter OR tahini.
Add water for a thinner consistency.
I served the potatoes with yellow carrots and celery sticks with a side of vegan chipotle mayo.
I used Fabanaise which is made from chickpeas!

Sweet Beet Salad—
Bed of butter lettuce with carrots, cucumbers, zucchini, beets, hemp seeds, organic olives, and steamed sweet potatoes.
Dressing:
Balsamic vinegar, Raw Tahini, Nutritional Yeast, Sea salt and Black Pepper!

I used as many organic ingredients as I could and always do my best to eat locally. Switch up the ingredients in these recipes to your delight and what’s growing locally. Eating vegan has become such a joy as I learn to diversify my meals and I’m grateful to share some of my discoveries with you!
