Homemade vegan energy balls – just a few simple ingredients, the base being oats and dates – good for pre or post workout, throwing in your bag for school or the office, and just…any time really! Make them varied and more exciting by rolling them in the other delicious options and you have a tasty snack to power you through your workout/class/meeting ☺

Recipe
Ingredients:
1 Cup of Oats
1 Cup of Dates
1 Tbsp 3-Nut Butter*
½ Tsp Ground Cinnamon
1 Tbsp Maple Syrup
½ Tsp Vanilla Bean Paste
A dash of hot water

*You can use any nut/seed butter that you please – but this one is what makes these balls particularly delicious! ☺
Optional Extras for Coating:
– Sesame Bar blended into crumbs
– Raw Chocolate Glaze (recipe coming soon)
– Shredded Coconut
Method:
1. Blend the oats in a food processor until finely ground
2. Add dates and blend again until mixture starts to come together
3. In a separate bowl, add the 3-Nut butter, cinnamon, maple syrup and just enough hot water to create a slightly more liquid consistency
4. Add this mixture to the food processor and blend with the oat and date mix until it clumps together into a ball
5. Wrap in cling-film and refrigerate (this is just to make the mixture a little less sticky so that rolling into balls a little easier)
6. I then roll the ball into a long sausage like shape and cut it into equal portions as I find this is the most efficient and easy way to do it
7. Roll into balls (whichever size you please!)
8. Roll the balls in the optional coating ingredients, or any other that you can think of and enjoy!!!
9. The balls may be kept in either the fridge or freezer
