INGREDIENTS
150g Quorn Pieces
2 tbsp olive oil
½ tsp chilli flakes
1 tsp dried oregano
½ tsp black pepper
1 clove of garlic, crushed
1 red onion, finely sliced
½ orange pepper, finely sliced
½ yellow pepper, finely sliced
1 tbsp black olives, halved
50g cheddar, grated or 1 ball of mozzarella, torn
Torn basil leaves

Ingredients for the Pizza Base:
250g gluten free flour
2 tsp xanthan gum
1 ½ tsp baking powder
50g butter
75g cheddar, grated
2 tbsp chopped fresh chives, optional
200ml semi skimmed milk

Ingredients for Tomato Sauce:
4 tbsp tomato puree
60ml vegetable stock
1 clove garlic, crushed
Bunch of fresh basil, chopped
Salt and pepper to taste

METHOD
Heat up your oven to 220°C/400°F/Gas Mark 7.
Start by making the pizza base. Sieve the flour, xanthan gum and baking powder into a bowl. Rub in the butter, add the cheese and chopped chives. Add the milk bit by bit until you have a dough. Turn it out on a floured board and knead for a minute until its smooth, then cover and put to one side.
Toss your Quorn Pieces in a mixture of chilli flakes, oregano, pepper and salt so they’re evenly coated.
Heat up 1 tbsp of the olive oil on a medium heat and cook your Quorn Pieces until they’re beautifully golden.
Put the rest of the oil in another pan and add the onion and peppers.
Time to make the tomato topping. Just mix up all the ingredients.
Now you can roll out your dough so its 1cm thick, and cut in 2. Brush with some oil, spread the tomato on the dough and top with onions, peppers, Quorn Pieces and olives. A sprinkle of grated cheese or shredded mozzarella and basil leaves and its ready to go into the oven. Bake for 20 minutes, until its golden brown. Serve. Enjoy!
