How To Clean and Cook Artichokes
1. Start by trimming off the top of the artichoke.
2. Then, using kitchen shears, cut away the leaves, working around the artichoke.
3. Now use a pairing knife to continue to trim around the artichoke until you get to the heart.
4. Use a spoon to scoop out the fuzzy insides.
5. Hold the artichoke hearts in acidulated water (water and lemon juice) while you trim the rest.
6. To cook the artichoke hearts, bring a pot of water to a boil and add a cut-up lemon, bay leaves, salt and peppercorns
7. Bring to a boil, then turn down to a simmer
8. Cook until the hearts are tender, about 15-20 minutes
9. Use immediately or cool and hold the artichoke hearts in the cooking liquid until needed.
