How To Clean Leeks
1. Rinse the leeks under cold running water to remove any visible debris and peel away the tough outer layers.
2. Working over the sink, hold the leek in one hand and a knife in the other.
3. Make an incision lengthwise starting 1 inch from the root and working down into the greens of the leek. Turn the leek 45 degrees and make another similar incision.
4. Trim away any unwanted dark green ends by working in a downward slicing motion and rotating the leek until the pale green inner leaves are exposed. Save the dark green leaves for stock.
5. Rince the leek again under cold water, peeling back the layers to expose any dirt that may be hiding stuck to the leaves.
6. Place the leek on a cutting board and trim away the root.
