How to Fillet Cooked Fish

Filleting a fish after cooking makes removing all of the meat much easier than filleting it raw. Instructions below.

How To Fillet a Raw Fish (Sea Bass)
1. Start with a fish that has been gutted and scaled which is something that you can request your fishmonger to do
2. With a filet knife, make a diagonal incision towards the head just under the fin.
3. Holding the knife perpendicular to the cutting board and starting at the head, run it along the backbone to the tail.
4. Starting at the top by the head again, holdhe knife firmly against the bones. Slide the knife down the fish making small slices while simultaneously pulling the filet from the bone.
5. Continue until you are at the tail and remove the filet.
6. Flip the fish over and repeat the process on the other side.
7. Trim any extra skin or fat from the filets.
8. Reserve the head, bones and tail for stock.
