Swiss Rolls are perfect for a light, sweet treat on a sunny day but what would make a Swiss Roll better? Adding multicoloured polka dots, obviously! This method is one I’ve been wanting to do or ages and now I’m sharing it with you guys. And once you have it down, the possibilities are endless.

RECIPE:

For the dots
50 g unsalted butter, softened
50 g icing sugar, sifted
2 eggs whites
50 g plain flour, sifted
Food colouring (paste or liquid in red, orange, yellow, green, blue and purple)

For the sponge
3 large free-range eggs, separated
80 g caster sugar
45 g unsalted butter, melted
75 g plain flour, sifted
½ tsp vanilla extract

For the filling
120ml double cream
Large blob of jam
Fruit of your choosing!
