How To Make Cocktail Onions

Ingredients:

1 ½ cups water
½ cup lemon juice
1 cup white wine vinegar
¼ cup sea salt
¾ cup honey
1 tsp black peppercorns
1 tsp coriander seeds
1 bay leaf
1 whole dried chili
2 peels from a lemon, about an inch wide
4 sprigs thyme
1 lb pearl onions, peeled

Directions:

Start by making the brine. Put the water, lemon juice, vinegar, salt and honey in a medium pot and heat until the salt and honey dissolve. Remove from the heat and add the rest of the ingredients, except for the thyme and onions. Allow this mixture to cool.

Put the thyme and onions in a non-reactive container and pour the brine and all the seasonings over the top. Put in the refrigerator and let sit for 2-4 days. Check the onions by biting into one. Depending on how cold your refrigerator is and how big the onions are, the pickling time will vary.
