How to make falafel. Vegan and gluten free chickpea patties make a perfect plant-based light lunch, dinner or even snack. They’re delicious and really easy to make.

Enjoy these gluten-free vegan falafel as a wrap, sandwich or on top of a salad. They would go perfect with my hummus and baba ganoush recipes.

Recipe

1.5 cups dried chickpeas soaked in water overnight or for 24 hours.
1 cup parsley
1/4 cup coriander
1/4 cup chopped onion
2-3 garlic cloves
1/2 tsp salt
1/4 tsp black pepper
1 tsp cumin
1 tsp coriander
1/4 tsp chilli powder
2 tsp dried mint
1 tsp baking powder
3 tbsp bread crumbs – to make it gluten-free, I used ground up rice cakes

Directions

Drain and rinse the chickpeas
Add to a food processor along with the rest of the ingredients
Blend until you have a well combined batter
Scoop the batter out using an ice cream scoop or a spoon. Shape into flat, round discs.
Heat some coconut oil in a frying pan on high. Start shallow frying your falafel. Once the bottom has browned, turn over and cook on the other side.
Transfer onto a plate covered with a paper towel.
