How To Make Homemade Fettucini Alfredo

Ingredients:

1 lb fettuccine
½ cup butter
3 cloves garlic, minced
1 cup heavy cream
1 cup Parmesan, grated plus extra for garnish
Salt, to taste
Black pepper, to taste
Fresh ground nutmeg
Fresh parsley, chopped

Directions:

Cook the fettuccine in a pot of boiling salted water until al dente (2-3 minutes for fresh pasta or according to package instructions). Drain and reserve ¼ cup of the cooking liquid.

While the pasta is cooking, melt the butter in a pot over medium heat and add the garlic. If the butter or garlic looks as if they are browning, turn down the heat. Saute for a few minutes just to soften the garlic. Add the heavy cream and cook a few minutes more. Remove from the heat and pour this mixture into a large serving bowl.

To the serving bowl add half the Parmesan cheese and stir to combine. Add the noodles and toss a few times. Pour in the rest of the Parmesan, parsley, salt, pepper and nutmeg and toss again. If the sauce is a bit thick, add some of the pasta water to thin it out.

Serve immediately.
