How to Make Gluten Free Rich Tea Biscuits

1/2 tsp salt
2 tbsp +
1 tsp brown sugar
1/3 cup white sugar
3/4 cup butter
1 1/2 tsp baking powder
1 3/4 cup Nextjen All Purpose Baking Blend (flour)
1 tbsp milk
1/2 tsp vanilla
Mix all dry ingredients and butter together with the paddle attachment of a mixer until the butter is pea sized.
Add the milk and vanilla and mix for 1 minute.
Roll the dough out on sweet rice flour until it is 5 mm thick.
Cut into rounds and place on a baking sheet (you can sprinkle the tops with granulated sugar); reroll the trim and cut out more cookies.
Bake for 8-10 minutes at 350°F.
You want the cookies to be golden; they can be dipped in chocolate or enjoyed plain with tea!
