Type of Kerala Wine Served At Christmas – Christmas Grape Wine

*This wine should be made 2 months in advance. Wines taste better with age.

Ingredients:

3 large glass jars – sterilized with hot water and dried
Active dry yeast – 2 teaspoons (dissolve the yeast in ½ cup warm water and let rise)
Seedless Grapes – 1 kilo washed and stalks removed
Sugar – 2 kilos
1 cinnamon stick – crushed
Cloves – 3
Sugar for caramelizing – ½ cup
Method:

Select a large glass jar to keep the grape wine in. Sterilize the jar with hot water. Set a side and allow to completely air dry. Mash the grapes and to this add a kilo of sugar. Mix thoroughly. Put the grape and sugar mixture into the dry jar and add the yeast, cinnamon and spices to it. Gently pour the water into the mixture and stir well. Put the lid on the jar and let the grape mixture ferment inside the jar for 3 weeks. Stir the grape mixture once a day until the 3 weeks are over. Make sure to always put the lid back on the jar after stirring.

Once the 3 weeks have passed wash, sterilize and completely dry another large glass jar. Strain the wine and put it into the new jar. Add the balance 1 kilo of sugar to the wine and stir. Close the lid tightly and leave for another 3 weeks.

After the 3 weeks has passed take another large glass jar and strain the wine into it. Add the caramelized sugar to it. Stir till fully dissolved. Strain again and pour into sterilized bottles and keep till ready to serve.

How to caramelize the sugar:

Heat the sugar in a pan with 2 tablespoons of water and bring to a boil. Do not stir. When the mixture becomes thick and syrupy remove from fire. Let it cool a bit before mixing it with the wine but do not allow the mixture to get hard.
