Hi Loves!
After my video of “What I eat in a day”, I got a lot of questions about those banana bread muffin recipe SO here it is!

I love making these nutrition packed muffins for the week and have them as a quick option for breakfast/ snack.
Eating them with a homemade raspberry chia jam is SO GOOD!

Ingredients:
3-4 large ripe bananas (mashed)
*3 eggs, room temperature
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/3 cup almond butter
1/3 cup coconut flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon sea salt
1 cup toasted walnuts, chopped

*To make the recipe VEGAN here’s an easy substitution option:

Directions:
1. Preheat oven to 350F. Grease 12 pan muffin tins with coconut oil.
2. In a large bowl or mixer, combine mashed bananas, eggs, coconut oil, vanilla extract and 1/3 cup almond butter and mix well until combined.
3.Add coconut flour, cinnamon, baking soda, baking powder and salt and mix well. Fold in walnuts.
4.Divide the batter between the muffin tins.
5. Bake in the oven for about 16-20 min.
6. Remove from oven and allow to cool for about 10 minutes.
