How To Make Homemade Lemon Pepper Seasoning

Ingredients:

8 lemons
½ cup of mixed peppercorns (black, white and pink)
2 tbsp whole coriander
6 sprigs fresh thyme, leaves only
¼ cup kosher salt
2 tbsp sugar in the raw

Directions:

Preheat the oven to 250 degrees.

Using a fine zester, such as a Microplane, zest all the lemons, making sure to only get the yellow skin and not the white pith. Put that in a bowl and add the peppercorns, coriander, thyme and mix well. Bake this mixture on a parchment-lined baking sheet in the oven until the lemon and thyme are dry and fragrant, about an hour. Remove from the oven and allow it to cool.

Working in batches, transfer the lemon mixture to a spice grinder and grind until it resembles a sand-like texture. Add this to a bowl and stir in the kosher salt and sugar.

The Lemon Pepper should be stored in an airtight container and will last in your cupboard for up to 2 months.
