How To Make Homemade Sage Gravy

Ingredients:

½ cup fat from butter, skimmed turkey grease, bacon grease or a mix thereof
½ onion, minced
12 sage leaves, chopped
½ cup AP flour
Splash white wine
2-3 cups chicken stock and pan drippings, heated
Splash heavy cream (optional)
Salt, to taste
Black pepper, to taste

Directions:

In a sauce pot over medium heat, add the fat, onions and sage and saute until lightly golden brown, about 8-10 minutes. Add the flour and cook 2 minutes more, whisking continuously. Then add the white wine and slowly pour in half of the chicken stock/pan dripping mixture. Whisk vigorously to remove any lumps. Add the rest of the stock mixture, salt and pepper and simmer for 5 minutes, stirring continuously to thicken the gravy. If the gravy is too thick, add more stock to thin it out. For a creamy gravy, add a touch of heavy cream.
