Mexican Burger
1 pound ground pork
1/2 pound Mexican chorizo
1 tablespoon salt
1 teaspoon black pepper
Vegetable oil, for grill and frying
4 corn tortillas
1/4 cup sour cream
2 teaspoons chipotle in adobo sauce
1/2 lime, juiced
1 can refried beans, reheated
Queso Blanco, crumbled
Sliced avocado, to serve
Pickled jalapeno, to serve
Shredded lettuce, to serve

1.Preheat griddle brushed with a thin layer of oil to medium-high. Heat 1/4-inch vegetable oil in a pan with high sides to 360F.
2.Combine pork, chorizo, salt and pepper. Form into 1/2-pound patties. Cook on griddle about 5 minutes per side, or until medium.
3.Combine sour cream, chipotle in adobo, and lime juice in a bowl.
4. Fry tortillas in hot oil on both sides until golden and crispy. Remove to a sheet tray lined with a paper towel. Season with salt.
5.Spread a layer of refried beans on one tortilla. Add burger, shredded lettuce, sliced avocado, chipotle sour cream, pickled jalapenos, queso blanco, and more chipotle sauce for heat. Top with another fried tortilla and enjoy!
