Struffoli
3 large eggs
2 tablespoons butter, softened
2 tabelspoons light brown sugar
1 teaspoon vanilla extract
1 orange, zested and juiced
2 cups all-purpose flour, plus extra for rolling
1 teaspoon salt
1/4 teaspoon baking powder
Vegetable oil to fry
1 cup honey
Sprinkles

1.In a bowl combine eggs, butter, light brown sugar, vanilla, orange zest and juice. Stir in the flour, salt and baking powder to form a dough. Wrap in plastic wrap and refrigerate 30 minutes.
2.On a floured surface cut dough into thirds. Roll each third into a log that is 1/2-inch thick. Cut dough into 1-inch pieces and roll into balls. Hold dough pieces on a floured sheet tray.
3.Heat oil in a large cast iron pot to 375 degrees. Line a sheet tray with paper towel. Drop dough pieces into the oil and cook until golden brown. Remove to paper towel lined tray.
4.Toss fried dough in honey and mound on a plate. Pour over excess honey and top with sprinkles.
