Ingredients:
3/4 cup unsalted butter (softened) (170g)
1 3/4 cup of white granulated sugar (337g)
2 large eggs
3 tsp. of vanilla extract (15mL)
1/2 tsp. of salt (2.5g)
2 1/2 tsp. of baking powder (12g)
2 1/2 cups of all purpose or cake flour (320g)
1 1/4 cups of milk (I like to use whole milk) (375mL)
1 lb. of powdered sugar (confectioners) (453g)
1/4 cup of milk or half and half (63mL)
1 tsp. of vanilla extract (5mL)

Hello and welcome back to In the Kitchen with Matt, I am your Host Matt Taylor, today I am going to show you how to make Vanilla cupcakes, mmm yummy, I love me some cupcakes. I had a request to make some vanilla cupcakes so here we go that is what we are going to do. They are really easy to make if I can make them you can make them, let’s get baking. All right first let’s go ahead and preheat our oven to 350 degrees F. or 176 Celsius. Down below in the description I will have the list of ingredients, and all of the amounts. All right so what we are going to do first is we are going to take the butter that we have softened, and we are going to add our sugar, and then with a hand mixer or wooden spoon or fork, let’s go ahead and cream these together. Scrape down the sides. All right now what we are going to do is we are going to add in our eggs, our vanilla extract, our salt, our baking powder, and let’s go ahead and cream this together, and then one time in between give the sides a good scrape. All right looking good. And at this point I want to add in my milk and our flour, but I don’t want to add it in all at once, so what I am going to do is I am going to add maybe a third of my milk, a third of my flour. And so on until everything is all mixed. And then at this point I am going to scrape the sides, and then add in the rest of our milk and the rest of our flour. Scrape the sides one last time. The batter is ready to go and now let’s just clean off the beaters. Now we want to fill up our paper cups, now you can fill these up however you like, you could put the batter in big piping bag, or you could just grab a big spoon and fill them up this way, it is totally up to you, just try and get the same amount in each one, all right once you have them ooh roughly about 2 thirds of the way, somewhere around there, they are ready to be baked. Go ahead and put them in the oven, middle rack, again 350 degrees F, 176 Celsius, and bake them for 15 to 20 minutes, until when you poke them with a toothpick they come out clean. All right when they come out of the oven they will look something like this, they will have a light golden brown edge around them, So I am going to let them cool in my pan for a couple minutes and then transfer them over to my cookie rack and then we will frost them. For the frosting, you can buy it if you like or just make it from scratch, again down below you will find the amounts for these ingredients, so we will put our milk in here, now you can use cream or half and half too if you want, vanilla extract, now I am going to add the powdered sugar, and I am just going to add a little bit at a time, of this, until I get the desired consistency, don’t just drop it all in there, go ahead and scrape, it is getting there, I am going to add just a little bit more powdered, sugar, not quite thick enough, again you can make this whatever consistency that you want, you could have it be really runny, and just have it fold over your cupcakes, or you can make them more stiff. All right that is kind of what I want, also at this point, I want to add a little bit of food coloring, I want to make these blue I think, I am going to go ahead and add some gel food gel in there. And then I want to just scrape the sides one last time. All right perfect.
