How to Pan Fry Sea Bass

How To Pan Fry Sea Bass

Ingredients:

2 sea bass filets, skin-on
Salt, to taste
Black pepper, to taste
2 tbsp AP flour
2 tbsp fine ground cornmeal
2 tbsp vegetable oil
1 tbsp butter
Fresh parsley for garnish
Lemon wedges for garnish

Directions:

Preheat oven to 200 degrees.

Season both sides of the sea bass filets with salt and pepper. In a shallow dish, mix together the flour and cornmeal. Dredge the filets in the mixture liberally coating both sides of the fish.

Heat a skillet over medium high heat just before it starts to smoke. Add the vegetable oil and the filets skin side down. If your pan is not large enough for both, then do the fish in batches and hold the cooked fish in the oven on a baking sheet. You do not want to crowd the pan. Cook for 2-3 minutes or until the coating looks golden brown. Add the half butter and carefully flip the fish over and cook 2 minutes more.

Garnish the sea bass with parsley and lemon wedges and serve immediately.
