How to Peel Pearl Onions

1. Near the stove, have the following ready: an ice bath, which is a fancy term for a large bowl of ice water; a fine mesh strainer, and a bowl lined with some paper towels.
2. Bring a large pot of water to a boil over high heat.
3. Trim the off the root ends of the onions and make a very shallow cross cut along the bottom of each of the onions. Then trim off the hairy tops.
4. Blanch the onions in the boiling water for 1 minute to loosen the skins.
5. Remove the onions from the boiling water with a fine mesh strainer and shock in the ice bath.
6. After the onions have cooled, the skin should easily peel right off using either a pairing knife or your fingers.
