How To Steam Halibut

Ingredients:

2 tbsp olive oil
2 tbsp butter
1 ½ cups leeks, sliced whites and pale green parts only
2, 6-oz. halibut filets
3 sprigs fresh thyme
¼ cup white wine
Salt, to taste
Black pepper, to taste
Lemon wedge for garnish

Directions:

In a saute pan over medium high heat add the olive oil, 1 tablespoon of butter and leeks. Cook until the leeks start to turn tender, about 8 minutes.

Season the halibut with salt and pepper on both sides and place on top of the leeks. Add the thyme, wine, turn down the heat to medium low and cover. Simmer until the fish turns opaque, about 6-10 minutes depending on the thickness of the fish.

Remove the lid and dab the last tablespoon of butter on top of the halibut.

Serve immediately garnish with lemon wedges.
