Making Echoʼs ice-cream cupcakes
1. pre-heat oven to 350 degree F
2. In stand mixer mix up your favorite brownie mix
3. Line cup-cake pan with foil liners and scoop 1tbsp of batter into each cup
4. Grease and flour a baking pan and fill with remaining batter to create a thin layer
3. Bake for 6- 8 minutes until brownie cooks through
4. Allow to cool completely
5. Using a cookie cutter the size of the top of a cupcake cut out as many circles as you
have cupcakes from the baking pan
6. Place all brownies in freezer (leaving the ones in the cupcake pan in the pan) for 30
minutes. Place vanilla ice cream in fridge to soften
7. Take out brownies and ice cream, run an ice cream scoop under warm water and
portion out ice cream in each foil cup (still in the cupcake pan)
8. Place the round brownies atop the ice cream
9. Place back in the freezer for 45 minutes to 1 hour
10. Fill pastry bag with vanilla frosting and pipe over cupcake in a swirl
11. Top with themed cupcake topper of your choosing
