Who doesn’t love a homemade blueberry muffin warm from the oven? No one, that’s who! This is a great recipe for kids to help out with for Mother’s Day. In fact, I think my kids could even make a batch by themselves (hint, hint!).

Sarah’s Tip of the Day:
The secret here is to use baking mix instead of measuring out separate dry ingredients. Applesauce lightens up the muffins, and buttermilk adds tang. Sugar, eggs, oil, vanilla, and blueberries are the only other ingredients you need. When you see what a cinch muffins are to make at home, you’ll be able to drive right by the bakery without stopping!
