Maltesers… yet another candy item that I should not have lying around. Once I open a packet, that’s it. I’m popping Maltesers like there is no tomorrow! This recipe for Malteser Cupcakes is a good way of ensuring that you use up an open bag of the little crispy blighters. Light and malty, it is packed full of the things! Please note that if you are overseas, an alternative can be found in Whoppers, which are practically the same.

RECIPE

For the cupcakes –

5g cocoa powder
25g Horlicks (Malted milk drink powder, Ovaltine or Milo are good alternatives)
95g Self-raising flour
125g caster sugar
¼ tsp bicarbonate of soda
Pinch of salt
135g unsalted butter, softened
2 large free-range eggs
¼ tsp vanilla extract
1 ½ tbsp whole milk

For the buttercream-

200g unsalted butter, softened
450g icing sugar, sifted
4 tbsp whole milk
¼ tsp vanilla extract
100g crushed Maltesers
Extra Maltesers for the top
